What I Cooked: Pt. Three
After last weeks What I Cooked Post, I received quite a few direct messages specifically about meals for weight loss, and if the meals I cook are good for this. None of the meals I cook are created around weight loss in particular, as that is not an area of concern for our family. This week of meals was a little more standard, starting out heavy on the cooking, then relying on left overs as the week progressed.
Remember, if you’re going through the effort of cooking, make enough to last for a few lunches during the week or to freeze for a future meals. Cook once and eat many times! Plus having easy, frozen, precooked meals on hand helps to avoid that urge to reach for fast food or convenience packaged food.
Easy Lentil Curry and Basmati Rice
1 small onion diced
1 clove garlic minced
1 small sweet potato chopped
1/4 head cauliflower chopped
1 tbsp curry powder
1/2 tsp turmeric
1.5 cups Veg broth
1/4 cup plant based milk
1 cup red lentils
1 large handful baby spinach
1/4 cup frozen peas
Saute diced onions in a tiny amount of coconut oil(1 tsp or less) for a couple mins until translucent. Add in minced garlic, sweet potato and cauliflower. Saute for a couple minutes, then add in curry powder and turmeric. Stir until all vegetables are coated in the spices and fragrant. Add vegetable broth, plant based milk., and red lentils.Simmer until sweet potato and cauliflower are tender. Add in baby spinach and frozen peas, stir until spinach wilts.
Serve over basmati rice cooked by evaporation method and cooled.
Creamy Ramen
The linked recipe by Budget Bytes is VERY similar to the one I threw together, except I added broccoli, used brown rice vermicelli instead of ramen noodles and topped it with sesame seeds.
Honestly, ramen is not my favorite (cue outrage) but the rest of my family loves it!
Chickpea Burgers
A super easy, protein packed, basic chickpea patty recipe. Switch up the spices and veggies to suit what you have on hand.
Serve on a lettuce wrap or burger buns of choice., with a side of air fryer french fries for a easy crow pleasing meal.
